Blackberry Peach Clafoutis

Ingredients

  • 1 cup/125g/4.2 oz sliced fresh peaches
  • 1 cup/125g/4.2 oz blackberries
  • 1/3 cup/60g/2 oz Natvia
  • 4 eggs
  • 1/4 tsp salt
  • 2 tsp vanilla extract
  • 1 cup/250ml/8.4 oz milk of choice
  • 1/2 cup/75g/2.6 oz all purpose flour
  • 3/4 tsp baking powder
Serves 6

Directions

  1. Preheat oven to 175°C and grease or spray a baking dish.
  2. Place sliced peaches and blackberries into baking dish.
  3. Whisk together Natvia, eggs, milk, salt, and vanilla extract.
  4. Slowly whisk in flour and baking powder.
  5. Pour mixture over fruit.
  6. Bake in preheated oven for 30-45 minutes, until golden brown and just set.
  7. Dust with Natvia Icing Mix if desired and serve with ice-cream or whipped cream.
