Breakfast Baked Oats

This delicious start to the day is packed with nutrition combining the flavours and energy of almonds, banana, and blue berries. Don't just stop there, feel free to rotate whichever fruits are in season. Breakfast is the perfect meal to pack most if not all if your recommended daily dose of fruits, so get creative with this super versatile dish! This recipe made 2 servings at just under 200cals a serve.

Ingredients

  • 1 x Ripe mashed banana
  • 1/2 Tsp baking powder
  • 2 tsp Natvia
  • 1/2 cup quick Oats
  • Dash of almond milk
  • 1/2 cup blueberries (or substitute with other berries or dried fruits)

Method

  1. Preheat oven to 170 deg.
  2. Mix all ingredients (except blueberries) together and spray/line baking tin to prevent sticking.
  3. Layer 1/2 blueberries or fruit into base of tins and then add mixture pressing down slightly.
  4. Top with remaining fruit. Bake until top is firm and browning.
