Cacao Zucchini Mini Loaf

Ingredients

230 g self raising flour (2 cups)

140 g Natvia natural sweetener (¾ cup)

50 g cacao powder (or Dutch cocoa powder) (½ cup )

1 large zucchini, grated

150 g unsalted butter, melted

1 teaspoon vanilla extract

3 eggs, lightly whisked

Method

  1. Preheat oven to 180ºC. In a bowl, combine flour, Natvia, cacao powder and zucchini.
  2. In a separate bowl, whisk together melted butter, eggs and vanilla. Add wet ingredients to dry ingredients.
  3. Spoon mixture into eight prepared mini loaf moulds. Bake for 20 minutes, or until a skewer comes out clean. Allow to cool on rack before eating.
