CARROT & RAISIN BROWNIES

Ingredients
100 g no added sugar dark chocolate, broken up into pieces
4 tablespoon coconut oil
100 g brown rice flour
50 g ground almonds
30 g Natvia natural sweetener
1 teaspoon cinnamon
0.5 teaspoon baking powder
2 egg well beaten
100 mls milk
1 teaspoon vanilla extract
2 carrots, grated
50 g raisins
50 g walnut pieces
Method
- Gently melt the dark chocolate and coconut oil then set aside to cool a little.
- Preheat the oven to 170 degrees C and grease and line a 9x9in baking tin.
- Mix together the flour, ground almonds, Natvia, cinnamon and baking powder in a bowl.
- Whisk the eggs well then pour in the melted chocolate. Add this to the bowl along with the milk and vanilla and combine to form a batter.
- Fold in the grated carrot, raisins and walnut pieces. Spoon into the prepared tin and smooth out evenly. Bake for 30 minutes until baked through.
- Leave to cool in the tin then cut into 9-12 squares.
