DOUBLE CHOCOLATE DOUGHNUTS

Serves: 12

Prep: 15 minutes + 30 minutes setting time

Cook: 20 minutes

Ingredients

50 g ground almonds

75 g brown rice flour

75 g Natvia natural sweetener

40 g cacao powder

4 tablespoon apple puree

180 mls almond milk

4 tablespoon coconut oil, melted

1 teaspoon vanilla extract

To glaze:

1 tablespoon coconut oil

4 tablespoon Nuttvia

1 tablespoon cacao powder

Cacao nibs, to decorate

Method

  1. Preheat the oven to 170 degrees C and lightly grease a 4 or 6 hole donut pan.
  2. Place all of the donut ingredients into a food processor and whizz up until quite thick and smooth.
  3. Spoon between the donut rings to reach just the top. Bake for 15-20 minutes until firm to the touch then leave to cool. Pop out onto a wire rack.
  4. Whisk together the glaze ingredients until smooth and glossy. Spoon over each one to cover, sprinkle over cacao nibs and leave to set for about 15 minutes. Then enjoy!
