CHERRY & PEAR CRUMBLE CRISP

Ingredients
3 pears, cored and chopped
150g frozen cherries
1 tablespoon cornflour
2 tablespoons Natvia natural sweetener
For the topping -
100g oats
30g gluten-free flour
90g Natvia natural sweetener
1 teaspoon cinnamon
Pinch of ginger (optional)
75g flaked almonds
75g margarine or solid coconut oil
Method
- First prepare the fruit base - mix together the chopped pears, cherries, cornflour and sweetener in a bowl, then tip into an ovenproof dish to fill generously (or use two small ones).
- Next mix together the flour, oats, sweetener, cinnamon, ginger and flaked almonds in a bowl and rub in the margarine or coconut oil until you have a mixture that resembles breadcrumbs. Add in the milk and mix well.
- Spoon this over the fruit and make sure it covers generously, then bake at 180C for 20 minutes until golden and bubbling. Enjoy hot or cold!
