
Chocolate Chunk Protein Muffins

Ingredients
- 1 x can chickpeas, rinsed and drained
- 2 scoops vanilla protein powder
- 1 x banana
- 50g oat flour
- 40g cocoa powder
- 90g Natvia Sweetener Stevia Synbiotics 250g
- 50ml oat milk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 40g no added sugar dark chocolate chunks
- 40g no added sugar white chocolate chunks
- 6 teaspoons no added sugar chocolate spread
Method
- Blend the chickpeas, banana, protein powder, flour, cocoa powder, Natvia Sweetener Stevia Synbiotics 250g, milk, vanilla and cinnamon until thick and smooth.
- Stir in most of the chocolate chunks then spoon half of the mixture between a 6-hole greased / silicone muffin tin.
- Add 1 teaspoon of chocolate spread in the middle of each one, then top with the rest of the mixture.
- Sprinkle over the remaining chocolate chunks, then bake for 15-20 minutes for 180C until golden. Leave to cool a little then enjoy warm or cold.
