Ingredients

For the frangipani layer :

  • 100 grams melted butter
  • 100 grams ground almonds
  • 3 tbsp Natvia Sweetener Canister 350g
  • 1 Egg
  • 1 tsp almond extract
  • Mix all the ingredients together to create an almond paste batter , set aside .

For the cake 

  • 4tbsp Natvia Sweetener Canister 350g
  • Butter 150g softened
  • Eggs 3
  • Self-raising flour 150g 
  • Ground almonds 75g
  • Zest of 1 orange 
  • Handful of Flaked almonds for the topping

Method

  1. Preheat oven to 160С
  2. Cream sweetener and butter until pale and fluffy. Beat in eggs, one at a time, until combined.
  3. Sift in flour and sprinkle in ground almonds; fold into mixture. Mix in orange zest .
  4. Add 1/2 of the batter to the tin followed by 1/2 frangipani mix, repeat again .
  5. Top the frangipani layer with flaked almond and bake for 60 min at 160C.
