COCONUT CAKE:
- 1 egg
- 150g Greek yogurt
- 100g coconut milk
- 1 tsp vanilla extract
- 2 Tbsp Natvia Sweetener Canister 350g
40g oat flour - 40g vanilla protein powder
- 40g dessicated coconut
- 20g coconut flour
- 1 tsp baking powder
- 1/4 tsp salt
FROSTING:
- 150g Greek yogurt
- 2 Tbsp Natvia Sweetener Canister 350g
- 10g coconut flour
Method
- Preheat oven to 180°C / 350°F.
- Whisk wet ingredients then stir in dry.
- Spread into a lined dish and bake for 20 minutes or till just cooked through.
- While the cake is baking, combine frosting ingredients and refrigerate.
- Let cake cool before icing and sprinkling with shredded coconut.
- Makes 12 pieces.
