Ingredients

COCONUT CAKE:

  • 1 egg
  • 150g Greek yogurt 
  • 100g coconut milk
  • 1 tsp vanilla extract 
  • 2 Tbsp Natvia Sweetener Canister 350g  
    40g oat flour
  • 40g vanilla protein powder 
  • 40g dessicated coconut 
  • 20g coconut flour 
  • 1 tsp baking powder 
  • 1/4 tsp salt

FROSTING:

Method

  1. Preheat oven to 180°C / 350°F.
  2. Whisk wet ingredients then stir in dry.
  3. Spread into a lined dish and bake for 20 minutes or till just cooked through.
  4. While the cake is baking, combine frosting ingredients and refrigerate.
  5. Let cake cool before icing and sprinkling with shredded coconut. 
  6. Makes 12 pieces.
