
Spiced Carrot Cake Bars
Ingredients
Ingredients:
- 100g gluten-free flour
- 20g oat flour or 2 scoops vanilla protein powder
- 100g Natvia Sweetener Stevia Synbiotics 250g
- 1 teaspoon turmeric
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 4 tablespoons natural / coconut yogurt
- 100ml oat milk
- 1 banana, mashed
- 2 carrots, grated
- 70g raisins or sultanas
For the drizzle
- 3 tablespoons Natvia zero icing sweetener ( Natvia Sweetener Stevia Synbiotics 250g blended)
- Pinch of cinnamon
- Chopped nuts
Method
- Mix together the flour, protein power/flour, Natvia Sweetener Stevia Synbiotics 250g, spices, yogurt, milk and banana until well combined.
- Stir in the grated carrot and raisins/sultanas and mix well again.
- Spoon into a silicone/greased individual bar mold - it will make about 8 bars. Fill to the top of each.
- Bake at 180C for 15-20 minutes until golden and firm. Leave to cool, then pop out onto a wire rack.
- Mix together the Natvia Sweetener Stevia Synbiotics 250g (Icing Sweetener), cinnamon and a dash of water to create a slightly runny consistency. Drizzle over each bar then sprinkle over chopped nuts.
- Allow to set then enjoy!
