Spiced Carrot Cake Bars

Ingredients

Ingredients: 

  • 100g gluten-free flour
  • 20g oat flour or 2 scoops vanilla protein powder
  • 100g Natvia Sweetener Stevia Synbiotics 250g
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 4 tablespoons natural / coconut yogurt
  • 100ml oat milk
  • 1 banana, mashed
  • 2 carrots, grated
  • 70g raisins or sultanas

For the drizzle

Method

  1. Mix together the flour, protein power/flour, Natvia Sweetener Stevia Synbiotics 250g, spices, yogurt, milk and banana until well combined.
  2. Stir in the grated carrot and raisins/sultanas and mix well again.
  3. Spoon into a silicone/greased individual bar mold - it will make about 8 bars. Fill to the top of each.
  4. Bake at 180C for 15-20 minutes until golden and firm. Leave to cool, then pop out onto a wire rack.
  5. Mix together the Natvia Sweetener Stevia Synbiotics 250g (Icing Sweetener), cinnamon and a dash of water to create a slightly runny consistency. Drizzle over each bar then sprinkle over chopped nuts.
  6. Allow to set then enjoy!
