CINNAMON APPLE MUFFINS

Must try these delicious Cinnamon Apple Muffins! They are the perfect afternoon snack and not only do they taste amazing, they deliciously healthy! Now you can enjoy guilt free!

Cook/Chill: 20-25 minutes bake

Ingredients

Ingredients:

100g gluten-free flour

100g ground almonds

100g Natvia natural sweetener

1 teaspoon cinnamon

1 teaspoon baking powder

100g apple puree

100g natural Greek or coconut yogurt

2 eggs or flax eggs

1 teaspoon vanilla extract

For the topping:

100g natural Greek or coconut yogurt

2 tablespoons Natvia natural sweetener

½ teaspoon cinnamon

1 apple, diced

1 teaspoon coconut oil

1 teaspoon Natvia natural sweetener

Pinch of cinnamon

Flaked almonds

Method

  1. Mix together all of the muffin ingredients to form a batter. Divide between 6 muffin cases in a 6 hole muffin tin to fill to the top of each.
  2. Bake at 180C for 20-25 minutes until risen and golden, then leave to cool.
  3. Meanwhile, mix together the yogurt, Natvia and cinnamon until smooth then chill in the fridge until needed.
  4. Heat the coconut oil in a pan and add the apple pieces and cinnamon. Cook for 5 minutes until softened then add in the cinnamon and stir well. Set aside.
  5. Once the muffins have cooled, spoon over the yogurt mixture on top of each, then spoon over some of the apples plus some flaked almonds. Enjoy!
