CINNAMON APPLE MUFFINS

100g gluten-free flour
100g ground almonds
100g Natvia natural sweetener
1 teaspoon cinnamon
1 teaspoon baking powder
100g apple puree
100g natural Greek or coconut yogurt
2 eggs or flax eggs
1 teaspoon vanilla extract
For the topping:
100g natural Greek or coconut yogurt
2 tablespoons Natvia natural sweetener
½ teaspoon cinnamon
1 apple, diced
1 teaspoon coconut oil
1 teaspoon Natvia natural sweetener
Pinch of cinnamon
Flaked almonds
Method
- Mix together all of the muffin ingredients to form a batter. Divide between 6 muffin cases in a 6 hole muffin tin to fill to the top of each.
- Bake at 180C for 20-25 minutes until risen and golden, then leave to cool.
- Meanwhile, mix together the yogurt, Natvia and cinnamon until smooth then chill in the fridge until needed.
- Heat the coconut oil in a pan and add the apple pieces and cinnamon. Cook for 5 minutes until softened then add in the cinnamon and stir well. Set aside.
- Once the muffins have cooled, spoon over the yogurt mixture on top of each, then spoon over some of the apples plus some flaked almonds. Enjoy!
