SPICED SWEET POTATO DONUTS

Ingredients
For the donuts:
1 sweet potato, cut into chunks and cooked
100g gluten-free flour
100g oat flour
100g Natvia natural sweetener
1 teaspoon cinnamon
½ teaspoon mixed spice
1 teaspoon baking powder
2 eggs
100ml milk of choice
1 teaspoon vanilla extract
For the glaze:
3 tablespoons zero icing sugar
Large pinch of cinnamon
Granola, to sprinkle over
Method
- Place all of the donut ingredients into a blender and whizz up until a slightly thick but smooth batter is formed.
- Divide this between a 6-hole greased donut tin - fill each to the top - then bake at 180C for 20-25 minutes until golden and risen. Leave to cool in the tin.
- Pop out onto a wire rack. Mix together the icing sugar with 1-2 tablespoons of water with the cinnamon to form a slightly runny icing mixture.
- Spoon this over each donut then sprinkle over granola. Leave for 10 minutes, then enjoy!
