Coconut Chia & Cacao Buckwheat Pudding

  • Coconut Chia Pudding:
  • 2 tbsp/20g/0.7 oz Chia seeds
  • 1/2 cup/125ml Coconut Cream
  • 1/2 cup/125ml/4.2 oz Coconut water
  • 1/2 tsp Vanilla Extract
  • 1 tbsp/14g/0.2 oz Natvia
  • Cacao Buckwheat Porridge:
  • 1/4 cup/46g/1.5 oz Raw Buckwheat soaked in water overnight and drained
  • 1 tsp psyllium
  • 2 tsp Du Chocolat
  • 2 tsp Cacao Powder
  • 1/4-1/2 cup/60-125ml/2-4.2 oz almond coconut milk
  • 1 tsp Coconut sugar to taste
Servings 1 jar

Directions

Coconut Chia Pudding:
  1. Stir all ingredients well and leave in the fridge overnight.
Cacao Buckwheat Porridge:
  1. Soak the raw buckwheat over night in water and drain.
  2. Blend all ingredients. Adding more liquid and sweetener to suit.
  3. Layer the two puddings with some fruit. Enjoy!
