Coconut Chia & Cacao Buckwheat Pudding

Ingredients
Coconut Chia Pudding: 2 tbsp/20g/0.7 oz Chia seeds 1/2 cup/125ml Coconut Cream 1/2 cup/125ml/4.2 oz Coconut water 1/2 tsp Vanilla Extract 1 tbsp/14g/0.2 oz Natvia Cacao Buckwheat Porridge: 1/4 cup/46g/1.5 oz Raw Buckwheat soaked in water overnight and drained 1 tsp psyllium 2 tsp Du Chocolat 2 tsp Cacao Powder 1/4-1/2 cup/60-125ml/2-4.2 oz almond coconut milk 1 tsp Coconut sugar to taste
Method
- Stir all ingredients well and leave in the fridge overnight.
- Soak the raw buckwheat over night in water and drain.
- Blend all ingredients. Adding more liquid and sweetener to suit.
- Layer the two puddings with some fruit. Enjoy!
