Coconut Chia & Cacao Buckwheat Pudding

Ingredients

Coconut Chia Pudding: 2 tbsp/20g/0.7 oz Chia seeds 1/2 cup/125ml Coconut Cream 1/2 cup/125ml/4.2 oz Coconut water 1/2 tsp Vanilla Extract 1 tbsp/14g/0.2 oz Natvia Cacao Buckwheat Porridge: 1/4 cup/46g/1.5 oz Raw Buckwheat soaked in water overnight and drained 1 tsp psyllium 2 tsp Du Chocolat 2 tsp Cacao Powder 1/4-1/2 cup/60-125ml/2-4.2 oz almond coconut milk 1 tsp Coconut sugar to taste

Method

  1. Stir all ingredients well and leave in the fridge overnight.
  2. Soak the raw buckwheat over night in water and drain.
  3. Blend all ingredients. Adding more liquid and sweetener to suit.
  4. Layer the two puddings with some fruit. Enjoy!
