Vegan coconut ice-slice (a true Natvia delight)
This vegan coconut ice slice recipe is a refreshing dessert made sugar-free using Natvia 100% natural sweetener. This recipe is a low carb high fat (LCHF) dessert that is also gluten free.
We've decided to combine two of the most refreshing ingredients this season and created a masterpiece. This vegan coconut ice slice is a deliciously refreshing and healthy dessert that is best served on a hot sunny day. This recipe is very easy to make and it requires very few ingredients. The main ingredients in this slice are not quite super-foods, but very good for your health and on top of that, they are yummy! Coconut is known for its cooling properties, as well as it is a great source of fibre and contains no cholesterol. Desiccated coconut is high in saturated fat, which makes it ideal as a LCHF dessert. It also comes with a great source of iron which is an important mineral for our daily functioning. Raspberries are high in vitamins, particularly vitamin C. They are a great immunity booster, high in antioxidants and great for aiding digestion. These delicious fruits are also fantastic for losing weight because they are high in dietary fibre and maganese, which is a mineral that keeps your metabolic rate high, burning more fat.
Ingredients
Coconut base
1/2 cup of coconut oil
1 cup of coconut cream- solidified
1/4 cup Natvia
1 tsp vanilla
4 cups desiccated coconut
Raspberry mix
3/4 cup rasberries
1/2 cup desiccated coconut
1 tbsp Natvia
Directions
1.Melt together coconut oil, cream, Natvia and vanilla over low heat
2. Combine with 4 cups of desiccated coconut
3. Flatten half of mixture with prepared tin and place in freezer
4. Blend raspberries and extra 1tbsp of Natvia and combine with rest of mixture
5. Add 1/2 cup extra desiccated coconut
6. Once bottom later is firm, flatten rest of mixture on top and place black in the freezer.
7. Once done, cut in slices and enjoy.
