This Cookie Dough Chocolate Banana Granola Loaf is a dream come true for chocolate lovers! Packed with flavor and texture, this loaf combines the sweetness of bananas, the richness of chocolate, and the irresistible crunch of cookie dough. Perfect for breakfast, a snack, or a dessert.
Ingredients
For the loaf:
- 200g gluten-free flour 🌾
- 100g Natvia natural sweetener 🌱
- 1 teaspoon baking powder 💨
- 2 bananas 🍌
- 2 tablespoons nut butter 🥜
- 100ml oat milk 🥛
- 1 teaspoon vanilla extract 🍦
- 3 tablespoons hazelnut chocolate/tahini spread 🍫
For the cookie dough balls:
- 50g oat flour 🌾
- 1 tablespoon smooth nut butter 🥜
- 1 tablespoon Natvia natural sweetener 🌱
- 2 tablespoons oat milk 🥛
- 30g no added sugar dark chocolate, cut into chunks 🍫
For the topping:
- 150g chocolate protein pudding 🍫
- Granola 🌾
Method
- Make the loaf: Blend all loaf ingredients (except choc spread) until smooth. 🥣
- Pour batter into a loaf tin. Dollop choc spread on top and swirl through. 🍫
- Make the cookie dough balls: Mix all cookie dough ingredients. Roll into small balls. 🍪
- Press cookie dough balls into loaf batter. 🍪
- Bake at 180°C for 40-45 minutes. ⏰
- Let cool completely. Top with chocolate pudding and granola. 🍫🌾
