
Double Chocolate Muffins

Ingredients
Here’s what you’ll need to whip up these delicious muffins:
- 50g butter, melted and cooled
- 75g yoghurt
- 3/4 cup milk
- 1 tsp vanilla extract
- 80g of Natvia Sweetener Canister 350g
- 130g plain flour
- 20g cocoa powder
- 60g chocolate protein powder
- 100g dark chocolate chips
- 1.5 tsp baking powder
- 1/4 tsp baking soda
- 1 egg
Method
- Mix the Wet Ingredients
Combine the melted butter with the Natvia Sweetener Canister 350g in a mixing bowl. Stir until well blended. - Add Dairy and Vanilla
Pour in the egg, yoghurt, milk, and vanilla extract, mixing until smooth and creamy. - Sift and Mix Dry Ingredients
In another bowl, sift the flour, cocoa powder, chocolate protein powder, baking powder, and baking soda. Gradually fold these dry ingredients into the wet mixture until just combined. Be careful not to overmix! - Add Chocolate Chips
Fold in the dark chocolate chips, spreading them evenly throughout the batter. - Refrigerate the Batter
Cover the batter and let it chill in the fridge for 30 minutes. This step helps the muffins rise better and makes them even more moist. - Preheat the Oven
Preheat your oven to 200°C (392°F). - Prepare the Muffin Tray
Line a muffin tray with paper liners and fill each one about three-quarters full. For extra indulgence, add a few more chocolate chips on top. - Bake the Muffins
Place the tray in the oven and bake at 200°C for 5 minutes. Then reduce the temperature to 180°C (356°F) and bake for an additional 12 minutes, or until a toothpick inserted in the center comes out clean. - Cool and Enjoy
Allow the muffins to cool in the tray for about 10 minutes before transferring them to a wire rack. Enjoy them warm or store for later!
