
Tiramisu Basque Cheesecake

Ingredients
Cheesecake Base
- 130g cream cheese
- 100g thick Greek yogurt
- 1 egg
- 40g Natvia Sweetener Stevia Synbiotics 250g
- 1/2 tsp vanilla bean paste
- 1/2 tsp instant coffee powder
- 5g cocoa powder
- 5g cornstarch
Topping
- 40g cream cheese
- 40g thick Greek yogurt
- 1/4 tsp vanilla bean paste
- 10g Natvia Sweetener Stevia Synbiotics 250g
- Dusting of cocoa powder
Method
- To a bowl, add the cream cheese, greek yogurt, Natvia Sweetener Stevia Synbiotics 250g and vanilla paste. Whisk until fully combined, then add the egg and whisk again.
- Add the coffee powder, cocoa powder and cornstarch and whisk until just combined.
- Pour into 2 lined ramekins about 3/4 full. Cook in the air fryer at 200°c for 12 minutes (place in the oven at 220°c for 12 minutes) until the edges are set but the centre has a slight wobble.
- Allow to cool fully in the ramekins. Then place in the fridge to set for 4 hours.
- Mix together all the topping ingredients until creamy.
- Remove the cheesecakes from the ramekins. Spoon half on top of each basque cheesecake.
- Serve with a dusting of cocoa powder and enjoy!
