Fudgey Sweet Potato Truffles

Ingredients
- 1/2 cup/125g cooked sweet potatoes mashed
- 1/2 each medium avocado
- 2 tbsp/14g Cocoa Powder
- 1 tbsp/20ml Coconut oil
- 1 tsp Natvia Sweetener
- 3 tbsp/21g Shredded coconut
- 2 scoops chocolate casein protein divided
Method
- Combine all ingredients plus 1 Scoop protein in food processor. Blend for bout 2 minutes. Remember at times to scrape down the sides.
- Pour mixture in to bowl and add another scoop of protein powder. Mix well.
- Scoop 1 tbsp at a time rolling into ball.
- Roll in Shredded Coconut.
- Refrigerate for at least 2 hours.
