Fudgey Sweet Potato Truffles

Ingredients

  • 1/2 cup/125g cooked sweet potatoes mashed
  • 1/2 each medium avocado
  • 2 tbsp/14g Cocoa Powder
  • 1 tbsp/20ml Coconut oil
  • 1 tsp Natvia Sweetener 
  • 3 tbsp/21g Shredded coconut
  • 2 scoops chocolate casein protein divided

Method

  1. Combine all ingredients plus 1 Scoop protein in food processor. Blend for bout 2 minutes. Remember at times to scrape down the sides.
  2. Pour mixture in to bowl and add another scoop of protein powder. Mix well.
  3. Scoop 1 tbsp at a time rolling into ball.
  4. Roll in Shredded Coconut.
  5. Refrigerate for at least 2 hours.
