GF Mandarin Almond Cake

Ingredients
- 3 medium mandarins, whole
- 1 cup Natvia natural sweetener
- 6 eggs
- 2 cups almond meal
- 1 tsp baking powder
- Whipped cream to serve
Method
- Ensure mandarins are clean, before place them in a pot of water. Boil for one and a half to two hours. Drain and allow to cool for one hour before blending to a puree
- Preheat oven to 170ºC. Line a 22cm spring form cake tin with baking paper, and grease the sides.
- In a large bowl, whisk eggs with sweetener until combined. Add the mandarin puree, almond meal and baking powder and stir through.
- Pour into cake tin and bake for one hour or until an inserted skewer comes out clean. Allow cake to cool for 30 minutes in the tin, before placing on to a cooling wrap. Serve with fresh whipped cream.
