Healthy Coconut Cake Recipe with Coconut Milk

Ingredients

100g butter 70g coconut oil 1 cup Natvia Baking Mix 2 tsp vanilla extract 4 eggs 3/4 cup organic high fibre coconut flour 1 1/2 tsp baking powder 1 1/2 cup coconut milk 200g natural yoghurt For icing: 250g butter 450g cream cheese 2 tsp vanilla extract 1 cup Natvia icing mix Shredded dried coconut

Method

1. Add 100g butter & 70g coconut oil to mixing bowl and beat until fluffy. 2. Add 1/2 cup Natvia Baking Mix and 2 tsp vanilla extract and continue beating. 3. Add the eggs one by one, continuing to beat the mixture as you go. 4.Add the coconut flour, baking powder, a teaspoon of salt and 1/2 cup of Natvia and mix to combine. 5. Stir in the coconut milk and yoghurt until smooth. 6. Pour the mixture into a greased and lined cake tin, and bake for 30 - 40 mins at 165°C 7. Once cake is cool, cut in half horizontally. For icing: 1. Toast shredded coconut in pan until browned 2. Combine cream cheese & butter, add the Natvia and vanilla and beat until fluffy. 3. Spread half the icing onto the bottom half of the cake. Layer with the top half of the cake, top with remaining icing and sprinkle with coconut. 4.
