Lemon, Chia, and Coconut Muffins

Ingredients

2 eggs

110 g vegetable oil (½ cup)

250 g milk (1 cup)

140 g Natvia (¾ cup)

375 g self-raising flour(2 ½ cups)

40 g desiccated coconut (½ cup )

zest of 1 lemon

1 teaspoon chia seeds

Method

  1. Preheat oven to 170C
  2. Combine wet ingredients in a large mixing bowl
  3. Combine the dry ingredients. Pour into the wet ingredients. Mix with a spatula until just combined.
  4. Spoon into a muffin tray. Bake for 15-20 minutes.
