Ingredients
- 110g extra virgin olive oil
- 2 large eggs, at room temperature
- 1/2 cup Natvia @natvialiving
- 2 teaspoons lemon zest
- 1 teaspoon pure vanilla extract
- 1 cup (115g) sifted gluten free flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
Method
- Beat eggs and sweetener together on high speed for at least 5 minutes until thick and pale. 🥚🌱
- Beat in lemon zest and vanilla extract. 🍋
- Whisk flour, baking powder, and salt together. Gently fold into egg mixture. 🌾
- Stir in olive oil. Batter will be thick and shiny.
- Chill batter for 30 minutes while preheating oven to 175C. ⏰
- Brush madeleine tray with melted butter. Add 1 tablespoon batter to each well. 🧈
- Bake for 10-12 minutes until golden and fluffy. ⏰
- Sprinkle with sea salt and lemon zest. 🧂🍋
