Ingredients

  • 110g extra virgin olive oil
  • 2 large eggs, at room temperature
  • 1/2 cup Natvia @natvialiving
  • 2 teaspoons lemon zest
  • 1 teaspoon pure vanilla extract
  • 1 cup (115g) sifted gluten free flour

  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt

Method

  1. Beat eggs and sweetener together on high speed for at least 5 minutes until thick and pale. 🥚🌱
  2. Beat in lemon zest and vanilla extract. 🍋
  3. Whisk flour, baking powder, and salt together. Gently fold into egg mixture. 🌾
  4. Stir in olive oil. Batter will be thick and shiny.
  5. Chill batter for 30 minutes while preheating oven to 175C. ⏰
  6. Brush madeleine tray with melted butter. Add 1 tablespoon batter to each well. 🧈
  7. Bake for 10-12 minutes until golden and fluffy. ⏰
  8. Sprinkle with sea salt and lemon zest. 🧂🍋
