100 g unsalted butter, melted

120 g almond meal (1 Cup)

160 g desiccated coconut (2 cup)

zest of 1 lemon

50 g Natvia ¼ cup


75 g coconut cream, chilled solid part (¼ cup)

1 lemon juice

50 g Natvia (¼ cup)


  1. Combine the butter, almond meal, desiccated coconut, lemon rind and Natvia in a bowl and stir to combine.
  2. Press into a 15cm square brownie tin. Cover and refrigerate.
  3. Whip the coconut cream and add the lemon juice and Natvia. Spread over the base, cover and refrigerate overnight, or for at least 2 hours. Slice into 16 squares.
