Lemon Slice

Ingredients
100 g unsalted butter, melted
120 g almond meal (1 Cup)
160 g desiccated coconut (2 cup)
zest of 1 lemon
50 g Natvia ¼ cup
Icing:
75 g coconut cream, chilled solid part (¼ cup)
1 lemon juice
50 g Natvia (¼ cup)
Method
- Combine the butter, almond meal, desiccated coconut, lemon rind and Natvia in a bowl and stir to combine.
- Press into a 15cm square brownie tin. Cover and refrigerate.
- Whip the coconut cream and add the lemon juice and Natvia. Spread over the base, cover and refrigerate overnight, or for at least 2 hours. Slice into 16 squares.
