LOW SUGAR APPLE CRUMBLE SLICE

Pastry Base Ingredients

  • 1 cup plain flour
  • 1/2 cup self raising flour
  • 1/2 cup cornflour
  • 1/3 cup Natvia
  • 125g butter
  • 1 egg
  • 1/4 cup iced water

Apple Filling Ingredients

  • 6 large Granny Smith apples, cored and sliced
  • 1/2 tsp ground cinnamon
  • 1 tbsp Natvia

Almond Crumble Ingredients

  • 1/3 cup Natvia
  • 1 tsp ground cinnamon
  • 2/3 cup plain flour
  • 60g butter
  • 2/3 cup slivered almonds

Methods

  1. Preheat oven to 180c, prepare a lamington pan lined with baking paper.
  2. Mix all flours and butter for pastry base ingredients, add egg and cold water.
  3. Flatten the dough and spread evenly on the pan. Fill with baking weight or rice and refrigerate for 20 minutes. Bake for 15 minutes or until light golden.
  4. Cook apple slice on medium heat with 1/2 cup water, add ground cinamon and Natvia. Cook until soft but still holding shape.
  5. Combine all ingredients and mix by hand.
  6. Lay the cooked apple on top of the pastry base, add the almond crumble mix.
  7. Bake for 30 minutes at 200c, cool for 30 minutes before serving. Serve with cream or Natvia icing mix.
