Pastry Ingredients
- 1 1/2 cup plain flour
- 3 egg yolks
- 125g chilled butter
- 1/2 cup Natvia
- 1 tbsp iced water
Filling Ingredients
- 1/2 cup lemon juice
- 1 tsp lemon zest
- 5 egg yolks
- 2/3 cup Natvia
- 1/3 cup thick cream
- 2 tbsp cornmeal
Methods
- Place flour, cubed butter and sugar in mixing bow. Use paddle attachment, mix until the mixture resembles bread crumbs.
- Separate eggs and add yolks one at a time while mixing.
- Add cold water to the mix.
- Turn out on floured bench, bring together to form a disc, cover and refrigerate to rest.
- Mix all filling ingredients in a bowl, pour into the base
- Bake for 35-40 minutes in preheated oven at 160C.
- Serve with fruit or whipped cream.
