LOW SUGAR LEMON TART

Makes 12 slices

Ingredients

Pastry Ingredients
1 1/2 cup plain flour 3 egg yolks 125g chilled butter 1/2 cup Natvia 1 tbsp iced water

Filling Ingredients

1/2 cup lemon juice 1 tsp lemon zest 5 egg yolks 2/3 cup Natvia 1/3 cup thick cream 2 tbsp cornmeal

Method

  1. Place flour, cubed butter and sugar in mixing bow. Use paddle attachment, mix until the mixture resembles bread crumbs.
  2. Separate eggs and add yolks one at a time while mixing.
  3. Add cold water to the mix.
  4. Turn out on floured bench, bring together to form a disc, cover and refrigerate to rest.
  5. Mix all filling ingredients in a bowl, pour into the base
  6. Bake for 35-40 minutes in preheated oven at 160C.
  7. Serve with fruit or whipped cream.
