Ingredients
Base:
- 1/2 cup/75g/2.6 oz unsalted macadamia nuts
- 1/3 cup/30g/1 oz rolled oats (make sure certified gluten free)
Filling:
- 2 tbsp/40ml/1.3 oz boiling water
- 1 1/2 tsp powdered gelatin
- 1 cup/250g/8.4 oz cream cheese, room temperature
- 1/4 cup/45g/1.5 oz Natvia
- 3/4 cup/200g/7.1 oz greek yogurt, plain
- 1/3 cup/83g/2.9 oz coconut cream
- 1/2 lime, zested and juiced
Directions
Base:
- Grind the macadamias and oats in a food processor.
- Place into the bottom of 6 dishes.
Filling:
- Combine gelatin and water together and set aside.
- Paddle cream cheese and Natvia together until light and fluffy.
- Add greek yogurt, coconut cream, and lime zest and juice until combined.
- Divide between the prepared dishes.
