Lime Cheesecake Pudding

Ingredients

Base:
  • 1/2 cup/75g/2.6 oz unsalted macadamia nuts
  • 1/3 cup/30g/1 oz rolled oats (make sure certified gluten free)
Filling:
  • 2 tbsp/40ml/1.3 oz boiling water
  • 1 1/2 tsp powdered gelatin
  • 1 cup/250g/8.4 oz cream cheese, room temperature
  • 1/4 cup/45g/1.5 oz Natvia
  • 3/4 cup/200g/7.1 oz greek yogurt, plain
  • 1/3 cup/83g/2.9 oz coconut cream
  • 1/2 lime, zested and juiced

Directions

Base:
  1. Grind the macadamias and oats in a food processor.
  2. Place into the bottom of 6 dishes.
Filling:
  1. Combine gelatin and water together and set aside.
  2. Paddle cream cheese and Natvia together until light and fluffy.
  3. Add greek yogurt, coconut cream, and lime zest and juice until combined.
  4. Divide between the prepared dishes.
Makes 6 cheesecakes
