Ingredients
- 8 egg whites
- 2/3 cup/100g/3.5 oz gluten free flour
- 1 cup/100g/3.5 oz almond flour
- 1 cup/180g/6.4 oz Natvia
- 1 tsp vanilla extract
- 1/2 cup/125g/4.4 oz butter, melted
- 2 cups/250g/8 oz mixed berries
- Preheat oven to 180°C and grease a round cake pan.
- Whisk the egg whites until stiff peaks form.
- Fold in gluten free flour, almond flour, and Natvia.
- Gently add in vanilla extract and butter.
- Fold in mixed berries.
- Pour into prepared pan and bake for 30-40 minutes until a toothpick comes out clean.
