Berry Almond Cake

Ingredients

  • 8 egg whites
  • 2/3 cup/100g/3.5 oz gluten free flour
  • 1 cup/100g/3.5 oz almond flour
  • 1 cup/180g/6.4 oz Natvia
  • 1 tsp vanilla extract
  • 1/2 cup/125g/4.4 oz butter, melted
  • 2 cups/250g/8 oz mixed berries
Directions
  1. Preheat oven to 180°C and grease a round cake pan.
  2. Whisk the egg whites until stiff peaks form.
  3. Fold in gluten free flour, almond flour, and Natvia.
  4. Gently add in vanilla extract and butter.
  5. Fold in mixed berries.
  6. Pour into prepared pan and bake for 30-40 minutes until a toothpick comes out clean.
