Peach Almond Cake

Ingredients:

  • 3/4 cup/180g/6.3 oz butter at room temperature
  • 1/2 cup/90g/3 oz Natvia
  • 1 tsp vanilla extract
  • 2 eggs
  • 2/3 cup/160ml/5.3 oz low fat plain yogurt
  • 1 cup/150g/5.2 oz plain flour
  • 1 cup/90g/3 oz almond meal
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 4 peaches, sliced
Makes: 12 slices

Directions:

  1. Preheat oven to 180°C and grease a cake pan.
  2. Paddle butter until light and fluffy and add the Natvia. Mix until combined.
  3. Add the vanilla extract and eggs and mix until combined.
  4. Add the plain yogurt and mix until combined.
  5. Add the almond meal, flour, baking powder, and salt and mix until combined.
  6. Pour into pan and place peaches on top.
  7. Bake for 30 minutes until golden brown and a tooth pick comes out clean.
  8. Store in an airtight container for up to 3-4 days.
