Peach Almond Cake
Makes 12 slices
Ingredients
3/4 cup/180g/6.3 oz butter at room temperature 1/2 cup/90g/3 oz Natvia 1 tsp vanilla extract 2 eggs 2/3 cup/160ml/5.3 oz low fat plain yogurt 1 cup/150g/5.2 oz plain flour 1 cup/90g/3 oz almond meal 1 1/2 tsp baking powder 1/4 tsp salt 4 peaches, sliced
Method
- Preheat oven to 180°C and grease a cake pan.
- Paddle butter until light and fluffy and add the Natvia. Mix until combined.
- Add the vanilla extract and eggs and mix until combined.
- Add the plain yogurt and mix until combined.
- Add the almond meal, flour, baking powder, and salt and mix until combined.
- Pour into pan and place peaches on top.
- Bake for 30 minutes until golden brown and a tooth pick comes out clean.
- Store in an airtight container for up to 3-4 days.
