PEACHES AND CREAM PROTEIN PANCAKES

Peaches and Cream Protein Pancakes

  • For the Pancakes:
  • 1/3 cup/30g/1 oz oat flour
  • 2 tbsp/14g/0.5 oz coconut flour
  • 1 scoop vanilla protein powder
  • 1 tsp allspice, ground ginger & baking powder
  • 2 tsp Natvia
  • 2 tbsp/40g/1.4 oz Greek yoghurt
  • 1 tbsp/20ml/0.7 oz coconut water
  • 1/4 cup/60ml/2 oz egg whites
  • 1/4 cup/30g/ 1 oz grated zucchini
  • For the Cream Sauce:
  • 2 tbsp/40g/1.4 oz Greek yoghurt
  • 1/2 cup vanilla protein powder
  • 1/2 tsp vanilla extract
Method
For the Pancakes:
  1. Blend all ingredients, and cook as desired.
  2. Top with chopped up peach and then cream sauce.
For the Cream Sauce:
  1. Add enough water or coconut water to the ingredients to make a sauce. Enjoy!
