A traditional butter pound cake is always a great choice, this recipe is really simple and it doesn’t require many ingredients. To accompany the cake we are going to make a delicious and soft vanilla frosting.
Ingredients
For the cake:
- 2 cups of self-rising flour, sifted
- 1 cup of butter, room temperature
- 1 cup of Natvia 100% Natural Sweetener
- 1 cup of milk
- 3 eggs, large
For the frosting:
- 1 cup of butter, room temperature
- 2 cups Natvia Icing Mix
- 2 tsp vanilla extract
Method
For the pound cake:
- Preheat the oven to 180º C.
- Cream your butter and Natvia together, it doesn’t matter if you do it with an electric mixer or by hand but mix them until light and fluffy.
- Add your eggs and keep whisking.
- Finally incorporate your sifted flour and milk, alternating between them in two batches.
- Pour the batter in a loaf pan and bake it for 25 minutes or until you are able to insert a toothpick in the middle of the cake and this comes out clean.
- When ready, remove from the pan and let it cool down completely.
For the frosting:
- Whisk together the room temperature butter and vanilla extract.
- When combined start adding Natvia Icing Mix, 1 tbsp at a time.
- Mix until all combined.
- Take your pound cake and cut 10 – 12 pieces.
- Add around 2 tbsp of frosting on each piece, just like a toast, spread it carefully.
- Optional: drizzle some honey on top of the frosting for extra flavour. (if you are diabetic please avoid honey or other sugar toppings)
