
Coffee Apple Bars

These Coffee Apple Bars are the perfect combination of sweet and savory flavors. With a hint of coffee and the natural sweetness of apples, these bars are a satisfying and energizing snack. Enjoy them as a breakfast option or a mid-afternoon pick-me-up.
Ingredients
- 150g gluten-free flour 🌾
- 90g Natvia 100% Natural Sweetener 🌱
- 2 tablespoons flaxseed 🌱
- 1 teaspoon baking powder 💨
- 2 tablespoons coffee, dissolved in 2 tablespoons boiling water ☕️
- 170ml oat milk 🥛
- 1 teaspoon vanilla extract 🍦
- 40g dried apple pieces 🍎
For the glaze:
- 4 tablespoons Natvia zero icing sugar 🌱
- 1 tablespoon peanut butter powder 🥜
- 1 teaspoon cinnamon 🍂
- Flaked almonds 🌰
- Dried apple pieces 🍎
Method
- Mix together the flour, Natvia 100% Natural Sweetener, flaxseed, and baking powder in a bowl. 🥣
- Mix together the cooled coffee, milk, and vanilla then pour into the bowl along with the dried apple pieces. Stir well. 🥛🍎
- Spoon between 8 small individual (ideally silicone) bar trays to fill to the top and bake at 180C for 15 minutes until golden, risen, and firm. ⏰
- Pop out of the tin once cooled onto a wire rack. 🍰
- Mix together the icing sugar, cinnamon, and peanut butter powder, and a dash of water until you have a slightly runny consistency. Drizzle over each bar then sprinkle some almonds and apple pieces. 🥜🌰🍎
