Sugar Free Almond Biscotti

Recipe by Maria My mom´s best friend was Italian and when I was younger we used to visit her two or three times a week; every time we went there she gave me these “cookies” that were so delicious to have with hot chocolate or a latte. You can make biscotti with fruits, nuts, chocolate... For this recipe we are going to use chunks of almonds and to make them healthier using Natvia 100% Natural Sweetener.

Ingredients

  • 1 cup of almonds, chopped
  • 3 cups of all purpose flour
  • 1 cup of Natvia 100% Natural Sweetener
  • 3 large eggs
  • ½ cup of butter, room temperature

Method

  1. Preheat your oven to 190º C.
  2. Sift your all purpose flour and mix it with your Natvia and chopped almonds; make a hole in the middle.
  3. Add the eggs and room temperature butter in the hole.
  4. Start whisking the eggs and butter while you slowly incorporate the all purpose flour mixture.
  5. Cover your dough with plastic wrap and refrigerate it for half an hour so it will be easier to shape it.
  6. Shape your dough into a rectangle.
  7. Bake your biscotti dough for 25 minutes and then let it cool down.
  8. Place your biscotti in a cutting board and cut crosswise slices with a serrated knife.
  9. Put them back in a baking sheet and bake for 15 minutes more or until golden.
