

Sugar-free blueberry muffins
We've never met anybody who doesn't like muffins. They are the ideal snack to have around the house, in your lunch box or as a quick bite on the go. They are a great breakfast option and go very well with a cup of good coffee. If you've got your breakfast sorter, muffins make the perfect afternoon snack too. Whilst we love all muffins, these sugar-free blueberry muffins are special to us in particular because of the great health benefits blueberries have. They are fantastic antioxidants and help with digestion. Ladies, blueberries are also great to keep your skin hydrated and give it healthy glowing skin (now that's something we love). They are also full of vitamins and a great source of fiber and potassium.
Whether you are hosting an afternoon tea soiree or you're planning to get organised and prep your lunches for the week, this recipe will definitely come in handy. This is a quick bake sugar free recipe, flavoured with desiccated coconut to add to a richer taste.
INGRDIENTS:
2 cup/250g/8.8oz Wholemeal SR flour
1/2 cup/90g/3.1oz natvia
1/3 cup/30g/1oz Dessicated Coconut0.
5oz/125g/4.4oz Melted butter
3/4 cup/187ml/6.2oz Coconut milk
2 ea. Eggs, lightly whisked1
cup/150g/5.2oz Frozen or fresh blueberries
METHOD
1. Preheat oven to 180°C and grease a 12 hole muffin tin
2. Combine flour, Natvia & desiccated coconut in a large bowl.
3. Add butter, coconut milk and egg and stir until just combined.
4. Stir in blueberries.Spoon evenly into prepared tin.
5. Bake for 20 – 25 mins or until a skewer comes out clean.
6. Set tins aside for 15 mins to cool, then turn muffins out onto a wire rack to cool completely.
This recipe makes 12 muffins.
