Refined Sugar free Lemon Slice

Lemon Slice - The healthy kind, Sugar free with a surprise ingredient - cauliflower Recipe by @healthyeating_jo (Serves 16) 

Base 1 cup dates (soaked in boiling water for 15mins and drained) Zest and juice of 1 lemon 1/8 cup coconut water (more as required) 1 Tbsp Natvia 1/2 cup oat bran 1/2 cup sunflower seeds 1/2 cup desiccated coconut Directions: Blend all ingredients and push into the base of a lined tin. Put in the freezer while you make the base. Filling
 Zest and juice of two lemons 1/2 cup Natvia icing mix 
(otherwise you can you Natvia granules blitzed in a blender for a few minutes first) 1/4 tsp ground turmeric (for colour) 2 cups puréed steamed cauliflower 1/3 cup coconut oil Pinch of salt Blend and smooth over base. 
Freeze overnight. Cut with a hot knife. Leave in the fridge to thaw out for 20mins before eating.
