
Video: Sugar Free Passion Fruit Cheesecake Recipe
For the base:
½ cup almond meal
½ cup protein powder
2 tbsp Natvia
½ tsp baking powder + ½ tsp salt, combined
¼ cup coconut oil
1-2 tbsp water
1 tsp vanilla extract
For the topping:
½ cup Greek yoghurt
1 cup extra light cream cheese
1 scoop protein powder
¼ cup Natvia
2 egg whites
Pulp of two passionfruit
Method:
Add base ingredients to a bowl. Mix together until the mixture forms a crumb. Form the mixture into a bowl and press it out flat in a lined springform cake tin. Bake the base for 12 minutes at 175 degrees.
Add topping ingredients to a blender. Blend until smooth and then pour over base. Bake for 35 mins at 155 degrees. Finally, leave in fridge to set. Enjoy!
