Vegan Chocolate and Peanut Butter Brownies

Ingredients

  • 200g sugar-free dark chocolate + extra extra chunks
  • 80g Natvia stevia
  • 2 tbps. sugar-free good quality cacao powder
  • 275g self-raising flour
  • Pinch of sea salt
  • 310ml almond milk
  • 1 tbp. Apple cider vinegar
  • 60ml olive oil
  • 6-8 tbsp. peanut butter.

Method

  1. Begin by preheating the oven to 180C degrees.
  2. Melt the dark chocolate by breaking it into pieces and melting over hot water.
  3. Place the stevia, cacao powder, flour and sea salt into a large mixing bowl and whisk together to mix the dry ingredients thoroughly.
  4. Pour in the melted chocolate, 2 tbsp. peanut butter, and almond milk and stir to combine the wet and dry ingredients together.
  5. Pour the brownie batter in a greased tin and sprinkle with extra pieces of the sugar-free dark-chocolate and place in the oven – bake for 18 minutes exactly.
  6. Allow the brownies to cool for approximately 4 hours, before removing them from the tin, this method will allow them to be extra gooey.
