Vegan Raw Vanilla Slice

Ingredients

Ingredients Base
  • 1 cup Almond meal
  • ¾ cup desiccated coconut
  • ½ cup Coconut oil, softened
  • 1 tbs Natvia
  Filling
  • 1 ½ cups raw cashews
  • ½ cup coconut cream
  • 1 tsp vanilla bean paste
  • 1 tbs lemon juice
  • 1 tbs Natvia

Method

  1. Soak the cashews for 15 mins in hot water. Drain and rinse.
  2. Combine the almond meal, coconut, coconut oil and Natvia in the bowl of a food processor and process until combined. Spread into a greased and lined slice tin. Clean out the food processor.
  3. Combine the filling ingredients in the food processor and process until smooth. Pour over the top of the base. Chill in the refrigerator for 4 hours. Slice and serve
