Ingredients
Oat mixture:
- ½ cup rolled oats
- 1–2 tbsp Natvia 100% Natural Sweetener (adjust to taste)
- 2 tbsp flour
- ½ tsp cinnamon
- 1 tbsp ground flaxseed
- ½ cup milk (dairy or plant-based)
- 1 apple, peeled, cored, and chopped
- ½ tsp vanilla extract
Custard layer:
- 3 tbsp Greek yogurt
- 1 tsp custard powder
- 1–2 tsp Natvia
- ¼ tsp vanilla extract
Optional toppings: nuts, seeds, honey, or maple syrup
Method
- Preheat the oven to 180°C and lightly grease a small ovenproof dish.
- In a bowl, combine oats, Natvia, flour, cinnamon, flaxseed, milk, apples, and vanilla extract. Mix until well combined.
- Spoon half of the oat mixture into the base of the ovenproof dish.
- In a separate bowl, mix Greek yogurt, custard powder, Natvia, and vanilla extract until smooth.
- Spread the custard mixture evenly over the oats in the dish.
- Top with the remaining oat mixture, pressing down gently.
- Bake for 25 minutes, or until golden on top and the custard is set.
- Let cool slightly before serving. Add optional toppings if desired.
