Apple Sponge

We LOVE a sponge, and we know you're going to LOVE this one! In under an hour you can whip up this delicious Vegan Apple Sponge, how great is that! Soft at the touch and absolutely delicious, put this Apple Sponge on the menu this evening.

Ingredients

  • 2 apples, peeled and diced
  • 1 tsp vanilla extract
  • 1 tbs vegan margarine
  • ¼ cup Natvia
  • 1 cup self-raising flour
  • ½ cup coconut milk
  • 2 tbs vegan margarine, melted
  • 1 tsp lemon zest

Method

  1. Preheat oven to 180C
  2. Stew the apples with vanilla, margarine and 2 tbs water until soft, about 8-10 minutes. Pour into a greased 2-liter baking dish.
  3. Whisk together the Natvia, flour, coconut milk, margarine and lemon zest.
  4. Bake for 15-20 minutes, until a skewer inserted comes out clean. Allow to cool for 5-10 minutes before eating.
