Apple Sponge

Ingredients
- 2 apples, peeled and diced
- 1 tsp vanilla extract
- 1 tbs vegan margarine
- ¼ cup Natvia
- 1 cup self-raising flour
- ½ cup coconut milk
- 2 tbs vegan margarine, melted
- 1 tsp lemon zest
Method
- Preheat oven to 180C
- Stew the apples with vanilla, margarine and 2 tbs water until soft, about 8-10 minutes. Pour into a greased 2-liter baking dish.
- Whisk together the Natvia, flour, coconut milk, margarine and lemon zest.
- Bake for 15-20 minutes, until a skewer inserted comes out clean. Allow to cool for 5-10 minutes before eating.
