Banana Nut Muffins

Ingredients

  • 3 large eggs
  • 1/4 cup organic almond or coconut milk
  • 1 large mashed banana
  • 2 cups almond meal
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 cup Natvia
  • pinch of salt
  • 1 tsp vanilla essence
  • 1 + 1/2 cup chopped walnuts
  • 1/4 tsp ground cinnamon
  • 1 tbsp Natvia
  • 2 tbsp melted butter

Directions

  1. Add 3 large eggs to a mixing bowl, along with 1/4 cup of almond milk (or coconut milk).
  2. Whisk the ingredients until combined.
  3. Add the single large mashed banana and continue to whisk until combined.
  4. Add 2 cups almond flour, 1 tsp baking powder, 1 tsp ground cinnamon, 1/4 cup Natvia, 1 tsp vanilla essence, and a pinch of salt and continue to whisk until combined.
  5. Add 1/2 cup chopped walnuts, and mix the walnuts into the mixture evenly. Set the mixture aside.
Topping:
  1. Add 1 cup chopped walnuts to a seperate mixing bowl, along with 1/4 tsp ground cinnamon, and 1 tbsp Natvia.
  2. Mix these dry ingredients together, then top with 2 tbsp of melted butter. Mix the butter in well.
Finale:
  1. Spoon the batter into muffin cups evenly and scoop the topping onto the tops of the muffins.
  2. Bake at 180°C for 20 - 25 mins.
