Banana Nut Muffins
Ingredients
- 3 large eggs
- 1/4 cup organic almond or coconut milk
- 1 large mashed banana
- 2 cups almond meal
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 cup Natvia
- pinch of salt
- 1 tsp vanilla essence
- 1 + 1/2 cup chopped walnuts
- 1/4 tsp ground cinnamon
- 1 tbsp Natvia
- 2 tbsp melted butter
Directions
- Add 3 large eggs to a mixing bowl, along with 1/4 cup of almond milk (or coconut milk).
- Whisk the ingredients until combined.
- Add the single large mashed banana and continue to whisk until combined.
- Add 2 cups almond flour, 1 tsp baking powder, 1 tsp ground cinnamon, 1/4 cup Natvia, 1 tsp vanilla essence, and a pinch of salt and continue to whisk until combined.
- Add 1/2 cup chopped walnuts, and mix the walnuts into the mixture evenly. Set the mixture aside.
- Add 1 cup chopped walnuts to a seperate mixing bowl, along with 1/4 tsp ground cinnamon, and 1 tbsp Natvia.
- Mix these dry ingredients together, then top with 2 tbsp of melted butter. Mix the butter in well.
- Spoon the batter into muffin cups evenly and scoop the topping onto the tops of the muffins.
- Bake at 180°C for 20 - 25 mins.
