Blueberry Vanilla Granola Bars
Ingredients
2 cup Rolled Oats (gluten free if needed)
1.5 cup Rice Krispies
0.33 cup Natvia
1 tablespoon Chia Seeds
0.25 cup Shredded Coconut
1 cup Chopped Roasted Almonds
0.66 cup Almond Butter
0.25 cup Coconut Oil
1 teaspoon Vanilla Extract
1 cup Blueberries
0.5 cup Greek Yogurt
1 teaspoon Vanilla Extract
1 cup Natvia
Method
- Add 2 cups rolled oats, 1 & 1/2 cups rice bubbles, 1/3 Natvia, 1 tbsp chia seeds, 1/4 cup shredded coconut, 1 cup chopped and roasted almonds to a mixing bowl. Stir the mixture evenly.
- In a seperate small bowl, add 2/3 cup almond butter and 1/4 cup coconut oil and stir well.
- Add the almond butter and coconut oil mixture to the dry oats mixture.
- Add 1 cup of blueberries to the mixing bowl and continue to evenly stir.
- Add the mixture to a flat baking tray or flat container that is at least a few cm deep. Press flat and compress the entire mixture to form an even layer in the tray or container. Place the sugar free granola in the freezer to chill for at least 30 mins!
- In a new bowl, add 1/2 cup greek yogurt, 1 tsp vanilla extract, 1 cup Natvia and whisk vigorously until thoroughly combined.
- Once the granola has set in the freezer, take it out and slice into bar portions.
- Take the vanilla yogurt mixture and drizzle with a spoon over the top of the granola bars.
- Place back in the freezer to set the yogurt mixture.
- Enjoy sugar free granola bars with vanilla and blueberry!
