Intro

These Carrot & White Chocolate Flapjacks are a perfect combination of sweet and healthy. Packed with the goodness of carrots and oats, these flapjacks are a satisfying snack or breakfast option. Enjoy the delicious blend of flavors and textures.

Ingredients

  • 100g oats 🌾
  • 1 teaspoon cinnamon 🍂
  • ½ teaspoon ginger 🍂
  • 3 tablespoons coconut oil 🥥
  • 3 tablespoons Natvia 100% Natural Sweetener 🌱
  • 3 tablespoons peanut butter 🥜
  • 2 carrots, grated 🥕
  • 50g no added sugar white chocolate, chopped 🍫

For the drizzle:

  • 3 tablespoons zero icing sugar
  • Dash of water

Method

  1. Mix together the oats, cinnamon and ginger in a bowl.
  2. Melt the coconut oil, Natvia, nut butter and coconut sugar gently, then pour into the bowl and mix well.
  3. Stir in the grated carrot and chocolate chunks, then mix to combine. Spoon into a greased and lined 9x9in baking tin, spread out and pat down well.
  4. Bake at 180C for 20 minutes until golden. Leave to cool then cut into bars. Enjoy!
