
Carrot & White Chocolate Flapjacks

These Carrot & White Chocolate Flapjacks are a perfect combination of sweet and healthy. Packed with the goodness of carrots and oats, these flapjacks are a satisfying snack or breakfast option. Enjoy the delicious blend of flavors and textures.
Ingredients
- 100g oats 🌾
- 1 teaspoon cinnamon 🍂
- ½ teaspoon ginger 🍂
- 3 tablespoons coconut oil 🥥
- 3 tablespoons Natvia 100% Natural Sweetener 🌱
- 3 tablespoons peanut butter 🥜
- 2 carrots, grated 🥕
- 50g no added sugar white chocolate, chopped 🍫
For the drizzle:
- 3 tablespoons zero icing sugar
- Dash of water
Method
- Mix together the oats, cinnamon and ginger in a bowl.
- Melt the coconut oil, Natvia, nut butter and coconut sugar gently, then pour into the bowl and mix well.
- Stir in the grated carrot and chocolate chunks, then mix to combine. Spoon into a greased and lined 9x9in baking tin, spread out and pat down well.
- Bake at 180C for 20 minutes until golden. Leave to cool then cut into bars. Enjoy!
