Chocolate and Cherry Tartlets

Recipe by Pamella Higgins Ah tartlets, they're the perfect amount of sweet deliciousness all wrapped up in a lovely, easy to eat, pastry cup! And our Chocolate and Cherry Tartlets are no different, except ours are filled with delicious, gooey, chocolatey goodness! These tartlets are full of flavour! From the dates baked into the crust to the cherries, almonds, and cacao nib that top this dessert off and add little surprises into every single bite. Without a doubt, the chocolate hazelnut filling that gives this dessert that extra punch is Nuttvia, our brand new hazelnut spread with ZERO palm oil, 97% LESS sugar and a 5 STAR health rating! Ingredients

For the base
  • 100g chickpea flour
  • 100g desiccated coconut
  • 3 tablespoons coconut oil, melted
  • 50g dates
  • Dash of vanilla extract
For the filling
  • 3 tablespoons Nuttvia spread
  • 3 tablespoons Greek yogurt
  • 1⁄2 teaspoon vanilla extract
  • 1⁄2 teaspoon cinnamon
To decorate
  • Fresh cherries
  • Flaked almonds
  • Cacao nibs

Tartlet

Method

  1. First make the base: Simply blend all of the ingredients together in a bowl so it sticks together. Divide between 3­4 mini tartlet tins and press in to cover the base and sides.
  2. Chill in the fridge for at least an hour.
  3. Meanwhile make the filling: Beat together the ingredients until quite thick and smooth then chill in the fridge for at least an hour.
  4. When ready to serve, remove the tartlets from the cases then spoon the chocolate mixture into each. Top each one with a cherry and sprinkle with almonds and cacao nibs. Serve and enjoy!
