Chocolate Beetroot Cake

Ingredients

  • 1/2 cup/125ml/4.1 oz butter
  • 1/3 cup/60g/2 oz dark sugar free chocolate chips
  • 3 eggs
  • 1 1/4 cup/225g/7.9 oz Natvia
  • 1/3 cup/80ml/2.6 oz milk of choice
  • 2 cups/250g/8.4 oz raw beetroot, peeled and coarsely grated (about 2 medium beetroot)
  • 1 1/2 cups/225g/7.9g plain flour
  • 2.5 tsp baking powder
  • 1/4 cup/25g/0.8 oz cocoa powder
Serves: 16 slices

Directions

  1. Preheat oven to 170°C and grease a cake pan.
  2. Melt butter and add chocolate, stirring until completely melted. Set aside.
  3. Whisk eggs until light and fluffy then add Natvia and mix until combined.
  4. Add butter mixture and mix until combined.
  5. Add milk and mix until combined.
  6. Add remaining ingredients and mix until combined.
