Chocolate Zucchini Pancakes with Salted Caramel Sauce

Ingredients
- Pancakes:
- 1/4 cup Oat flour
- 1/4 cup Buckwheat flour
- 2 tsp psyllium powder
- 1 heaped tsp Maca powder
- 1 tbsp Cacao Powder
- 3/4 cup/180ml/ Unsweetened Almond Milk
- 1 tsp Yacon syrup
- 1 tbsp/14g/natvia
- 1/2 tsp Baking soda
- 1/2 tsp Apple Cider vinegar
- 1/2 tsp Vanilla Extract
Method
- Pancakes: Blend all ingredients into a blender until smooth.
- Cook over medium heat in a non stick pan with some coconut oil.
- Sauce: Mix all ingredients well and pour over pancakes!
