
Gingerbread Banana Loaf

Ingredients
Ingredients:
- 200g flour
- 1 teaspoon baking soda
- 1 teaspoon ginger, ground
- ½ teaspoon mixed spice
- ¼ teaspoon nutmeg, ground
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 3 ripe bananas
- 150g Natvia Sweetener Canister 350g
- 1 large egg
- 60 grams oil (avocado, canola or melted coconut oil)
- 1 teaspoon vanilla
For the frosting :
- 60g butter
- 25ml Brandy
- 2 tsbpNatvia Sweetener Canister 350g
- Vanilla paste (optional)
Method
1. Preheat the oven to 180C degrees.
2. In a medium bowl, whisk together the flour, baking soda, ginger, mixed spice, nutmeg , cinnamon and salt.
3. Put the bananas and Natvia Sweetener Canister 350g in another large bowl. Mash with a fork . Add the egg, mixing well to incorporate. Stir in the oil and vanilla, mixing well.
4. Stir in the flour mixture, a third at a time, until thoroughly combined.
5. Set batter aside to rest for 30 minutes.
6. Prepare the loaf pan Pour the butter in.
7. Bake for about an hour or until a toothpick or cake tester comes out clean. (25-30min)
8. Meanwhile beat the butter, sweetener and vanilla together until pale, then whisk in the brandy, one tbsp at a time, until you are pleased with the taste.
9. Remove the cake from the oven , let it cool.
10. Spread the butter cream over the banana cake , sprinkle with crushed gingerbread cookies ( optional )
