Method
1. Preheat the oven to 180C degrees.β¨
2. In a medium bowl, whisk together the flour, baking soda, ginger, mixed spice, nutmeg , cinnamon and salt.β¨
3. Put the bananas and Natvia Sweetener Canister 350g in another large bowl. Mash with a fork . Add the egg, mixing well to incorporate. Stir in the oil and vanilla, mixing well.β¨
4. Stir in the flour mixture, a third at a time, until thoroughly combined.β¨
5. Set batter aside to rest for 30 minutes.β¨
6. Prepare the loaf pan Pour the butter in.β¨
7. Bake for about an hour or until a toothpick or cake tester comes out clean. (25-30min)β¨
8. Meanwhile beat the butter, sweetener and vanilla together until pale, then whisk in the brandy, one tbsp at a time, until you are pleased with the taste.
9. Remove the cake from the oven , let it cool.
10. Spread the butter cream over the banana cake , sprinkle with crushed gingerbread cookies ( optional )
