GLUTEN-FREE BLACK FOREST CAKE

Ingredients

100 g Oat flour (1 cup)

50 g ground Almonds (1/2 cup)

30 g Cocoa or Cacao powder (1/4 cup)

2 tablespoon Flaxseed

1 teaspoon Baking powder

50 g Apple puree (3 tbsp)

150 g Nuttvia hazelnut spread (1/2 cup)

75 g Natvia (1/3 cup)

100 g Almond milk (1/2 cup)

1 teaspoon Apple cider vinegar

1 teaspoon Vanilla Extract

75 g frozen Cherries (or your choice of berries)

50 g Sugar-free Dark Chocolate, chopped (1/4 cup)

Method

  1. Preheat the oven to 170C and grease and line a 20cm loose-bottomed cake (or fluted tart) tin.
  2. Mix together the oat flour, ground almonds, cacao or cocoa powder, flaxseed and baking powder in a bowl.
  3. Whisk together the apple puree, Nuttvia, Natvia, milk, vinegar and vanilla then pour into the dry ingredients and mix to form a batter.
  4. Spoon the mixture into the tin and smooth out evenly. Arrange the cherries on top and scatter over the dark chocolate. Bake for 25-30 minutes until firmed up. Leave to cool then cut into 8 slices and enjoy!
  5. Sprinkle flaked almonds on top.
