Servings: 8 | Prep Time: 10 minutes | Cook time: 10 minutes | Total time: 20 minutes |
Ingredients
- 1/3 cup rolled oats
- 1 tsp matcha powder
- 1 scoop vanilla protein powder
- 1/4 cup granulated Natvia
- 2 Tbsp ground flaxseed
- 1 Tbsp coconut flour
- 1/2 tsp baking powder
- 1/4 tsp bicarb soda
- 1/3 cup almond milk unsweetened
- 1/4 cup liquid egg whites
- 1/4 cup fat free yoghurt
- 1/2 tsp vanilla extract
Matcha Icing:
- 1 Tbsp coconut oil melted
- 1/8 tsp matcha powder
- 2 Tbsp sugarfree Natvia icing sugar
Method
- Preheat your oven to 180°C and lightly grease a doughnut pan with coconut oil.
- Place the oats, matcha, protein powder, Natvia, flaxseed, coconut flour, baking powder, and bicarb soda into a blender and blitz until combined.
- Add the almond milk, egg whites, yoghurt, and vanilla extract. Blend again until you have a smooth batter.
- Spoon the mixture evenly into the doughnut pan. Bake for 10 minutes, until risen and lightly golden.
- Remove from the oven and turn the donuts out onto a wire rack straight away. Allow to cool completely before icing
For the Matcha Icing:
- In a small bowl, stir together the melted coconut oil, matcha powder, and Natvia Icing Mix until smooth.
- If you’d like a runnier consistency, stir in a splash of almond milk.
For the Chocolate Icing:
- Place the chocolate melts and coconut oil in a heatproof bowl. Set the bowl over a pot of gently simmering water and stir until melted and smooth.
- Remove from the heat and mix in the Natvia Icing Mix.
To Finish:
Dip each cooled donut into your icing of choice (or both if you can’t decide!) and decorate as desired. Enjoy!
