
Mini Strawberry Cake
Intro
Craving cake but don’t want to bake (or eat!) a whole one? This Mini Strawberry Cake is the perfect solution—light, fluffy, and just the right size. Naturally sweetened with Natvia Sweetener Canister 350g, it’s a simple, sugar-free treat you can whip up in no time.
Topped with fresh strawberries and whipped cream, it’s everything you love about homemade cake—just lighter, smaller, and better for you.
Ingredients
For the cake:
- 75g all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- 1 large egg
- 65g Natvia Sweetener Canister 350g
- 70g milk
- 30g light-tasting oil
- 1 tsp vanilla extract
For the frosting:
- 100g cold whipping cream
- ¾ tbsp Natvia Sweetener Canister 350g
- ½ tsp vanilla extract
- 10 fresh strawberries (halved or whole)
Method
For the Cake:
- Preheat oven to 180°C and line a 15cm cake pan with parchment paper.
- Mix dry ingredients: In a small bowl, combine flour, baking powder and salt. Set aside.
- Beat egg & sweetener: In a separate bowl, whisk the egg and Natvia Sweetener Canister 350g using an electric mixer for 5–7 minutes until pale and fluffy.
- Combine: Gently fold in the dry ingredients until just combined.
- Warm milk mixture: Heat milk, oil and vanilla together (about 15 sec in microwave). Slowly add to the batter while mixing on low until smooth.
- Bake for 30–35 mins or until a toothpick comes out clean. Let cool completely.
FOR THE TOPPING
- Beat cold whipping cream, Natvia Sweetener Canister 350g and vanilla until stiff peaks form.
- Spread generously over the cooled cake and top with fresh strawberries 🍓
