NO-BAKE CHOCOLATE, OAT & ALMOND BARS

Recipe by Pamella Higgins Some pictures say a thousand words, others make your stomach rumble and some, well, they just do both. This no-bake Chocolate, Oat and Almond Bars are a gift from the dessert heavens. It's hard to believe they're refined-sugar-free but what isn't hard to believe is just how good they taste. Although this would make an extra special treat to entertain with, it would make an even better treat to keep hidden and indulge for yourself!

Ingredients:

For the base -
  • 1 cup oats, whizzed up in a blender to form a flour
  • ½ cup ground almonds or almond flour
  • 2 tablespoons coconut oil, melted
  • 3 tablespoons Natvia natural sweetener
  • 2 tablespoons almond milk
  • 1 teaspoon vanilla extract
For the topping -
  • 1 tablespoon coconut oil
  • 2 tablespoons almond butter
  • 2 tablespoons cacao powder
  • 3 tablespoons Natvia natural sweetener

Method:

  • First, make the base: Mix together the oat flour and ground almonds/almond flour in a bowl.
  • Whisk together the melted coconut oil, Natvia, almond milk and vanilla until smooth, then pour this into the dry ingredients. Mix well to form a soft dough.
  • Line a small, deep Tupperware box with greaseproof paper. Tip in the dough and use your hands to spread it evenly across the base - it should be about 1cm thick. Place in the freezer.
  • Now make the topping: Gently melt the coconut oil and almond butter until smooth, then whisk in the cacao powder and Natvia.
  • Spread this over your base to cover and so it is about ½ cm thick. Return to the freezer for at least 2 hours.
  • When you’re ready to serve, remove from the freezer a few minutes beforehand. Remove from the box and place on a chopping board, then cut into slices (makes about 5). Sprinkle over cacao nibs and drizzle over some melted sugar-free dark chocolate (if you wish), now enjoy!
Keep any remaining slices in the freezer for up to 1 month, allowing a few minutes to defrost before eating.
