NO-BAKE CHOCOLATE, OAT & ALMOND BARS
Ingredients
1 cup oats, whizzed up in a blender to form a flour
0.5 cup ground almonds or almond flour
2 tablespoon coconut oil, melted
3 tablespoon Natvia natural sweetener
2 tablespoon almond milk
1 teaspoon vanilla extract
1 tablespoon coconut oil
2 tablespoon almond butter
2 tablespoon cacao powder
3 tablespoon Natvia natural sweetener
Method
- First, make the base: Mix together the oat flour and ground almonds/almond flour in a bowl.
- Whisk together the melted coconut oil, Natvia, almond milk and vanilla until smooth, then pour this into the dry ingredients. Mix well to form a soft dough.
- Line a small, deep Tupperware box with greaseproof paper. Tip in the dough and use your hands to spread it evenly across the base - it should be about 1cm thick. Place in the freezer.
- Now make the topping: Gently melt the coconut oil and almond butter until smooth, then whisk in the cacao powder and Natvia.
- Spread this over your base to cover and so it is about ½ cm thick. Return to the freezer for at least 2 hours.
- When you’re ready to serve, remove from the freezer a few minutes beforehand. Remove from the box and place on a chopping board, then cut into slices (makes about 5). Sprinkle over cacao nibs and drizzle over some melted sugar-free dark chocolate (if you wish), now enjoy!
